La Rioja to produce caviar

The governor of La Rioja, Beder Herrera, and the president of the board of directors of
the Russian firm Esturiones & Caviar SA, Facundo Fredes, signed a 15-year concession contract with the Pisciculture Plant of Anillaco to produce caviar.
In so doing, La Rioja will be the first province in Argentina to produce caviar and the second in the Southern hemisphere. A sturgeon farm belonging to the company Esturiones Rio Negro SA is already set up in Uruguay.
The company is expected to supply the national and international market, after generating about 25 direct jobs for people of the La Costa area.
"The perfect biological conditions for breeding sturgeon exist here,” stressed the secretary of the Environment, Nito Brizuela.
The initiative contemplates that the company overhaul the plant to accommodate the undertaking.
Brizuela explained that the plant will be used for the study of sturgeons, as a Russian biological institute works with the concessionary company, by which all the information that is generated in La Rioja will serve as a parameter for plants around the world dedicated to this activity, Radio Fenix reports.
Meanwhile, the investment was put into effect after the characteristics of water and temperature were analysed, Fredes indicated.
"It is very important for us to feel comfortable in the place where we are going to work, and La Rioja meets our needs, considering that this is a long-term investment," the executive added.
The optimal cycles of preparation of the specimens are approximately eight years to arrive at peak production, Fredes explained.
“The company sees generating 10 tonnes as feasible,” he noted.
The plant will become operational in about 15 days, and the first sturgeon eggs are expected to enter in approximately one month.
